Hummus is a creamy, flavorful dip made from blended chickpeas, tahini, garlic, and lemon juice, creating a smooth and rich texture. This vegan dish is packed with protein and healthy fats, making it a delicious and nutritious addition to any meal or snack. The combination of earthy chickpeas and the nutty flavor of tahini is perfectly balanced by the brightness of lemon and garlic. Hummus is perfect for dipping fresh vegetables, pita bread, or as a spread on sandwiches.
Ingredients
(Seasonings should be added to taste.)
10 ounces dry chickpeas
water (for soaking and cooking)
2 tablespoons tahini
4 garlic cloves, minced
juice of 1 lemon
ground cumin
sea salt
black pepper
For Garnish:
olive oil
fresh parsley, chopped
Instructions
Preparing the Chickpeas
Start by soaking the dry chickpeas in water for one day. The chickpeas will nearly double in size. Once soaked, drain the water and rinse the chickpeas thoroughly until the water runs clear. Transfer the chickpeas to a pot and add fresh water to cover them.
Cooking the Chickpeas
Bring the water to a boil, then skim any foam off the top. Lower the heat to medium and let the chickpeas simmer for two hours with the lid partially open. Avoid stirring the chickpeas during cooking. By the end of the cook time, the chickpeas should be tender and fully cooked.
Blending the Hummus
Once cooked, transfer the chickpeas to a blender, and save the chickpea water air it will help you with blending. Add tahini, fresh garlic, lemon juice, ground cumin, sea salt, and black pepper to the chickpeas in the blender. Pulse until the ingredients start to combine. Gradually add the reserved chickpea water until the hummus reaches your desired smooth consistency.
TIP: For an even smoother texture, some like to soak the cooked chickpeas in an ice bath to peel off the skins. This step is optional but adds extra creaminess to the hummus.
TIP: You can also use ice cubes in place of chickpea water.
Serving the Hummus

Once blended, transfer the hummus to a serving dish. Create a small crater in the middle and drizzle olive oil into it. Garnish with fresh parsley for an added burst of color. Serve the hummus with fresh pita bread for dipping.
