Licorice Root Drink | Erk Sous

Licorice root drink, known as "erk sous" in Egyptian culture, is a traditional beverage commonly enjoyed during Ramadan in Egypt and other parts of the Middle East. Known for its bold, earthy flavor and natural sweetness, it is often served to quench thirst and refresh after a long day of fasting. While beloved by many for its unique taste, Erk Sous is undeniably polarizing—some find it irresistible, while others find its flavor too strong or distinctive. Despite its divisive nature, it remains a cherished part of Ramadan traditions.

Ingredients

  • ¼ cup licorice root, coarse

  • ¼ teaspoon baking soda

  • 2-3 cups water (adjust based on desired strength for the drink)

Instructions

Preparing the Licorice Root

Begin by combining coarse licorice root with baking soda in a bowl. Add a small splash of water, just enough to moisten the mixture. Massage the mixture with your fingers to evenly distribute the baking soda throughout the licorice root. Leave the bowl as is and allow it to rest for a few hours at room temperature.

Watching the Transformation

During the resting period, you will notice the licorice root change color from a vibrant brown to a deep black. This is completely normal and signals that the preparation is on track. Once the licorice root has darkened, it’s ready for the next step.

Straining the Licorice Root

Transfer the blackened licorice root to a strainer. Slowly run fresh water through it to extract the licorice flavor, letting the liquid collect in a bowl or pitcher below. For a traditional touch, pour the drink from a high distance to create foam on the surface. Your erk sous is now ready to serve.

Ramadan Tip

To enjoy erk sous during Ramadan, prepare the licorice root early in the day so it has ample time to rest and develop its flavor. Strain and pour the drink just before sunset, ensuring a fresh and foamy drink ready to break your fast.

The Egyptian Cook’s Thoughts on Licorice Root Drink

Licorice root drink, or erk sous, is a polarizing beverage. Some people adore its bold and unique flavor, while others might not enjoy it at all. The Egyptian Cook humorously comments, “Drinking this will make you want to keep fasting,” and reassures you with, “You don’t have to try this drink.” Whether you love it or leave it, erk sous remains a staple of traditional Egyptian culture.
