Egyptian freek is a hearty and flavorful dish made with young wheat, golden raisins, and a blend of aromatic spices like nutmeg, turmeric, and cinnamon. This vegan version of freek is a perfect balance of savory and slightly sweet, with the richness of caramelized onions adding depth to the dish. Ingredients
(Seasonings should be added to taste.)
For the Young Wheat:
1 yellow onion, diced
olive oil (for sautéing)
1 ½ cups young wheat (freek)
¼ cup golden raisins
approximately 3 cups water
ground nutmeg
ground turmeric
ground cinnamon
sea salt
black pepper
For Garnish:
sliced toasted almonds
fresh cilantro
Instructions
Cooking the Freek
Start by dicing the yellow onion and frying it in olive oil until it begins to brown. Once the onions are golden and fragrant, add the washed young wheat (freek) and golden raisins to the pan, stirring to combine.
Adding Water and Seasoning
Next, add approximately 3 cups of water to the mixture. Season with ground nutmeg, ground turmeric, ground cinnamon, sea salt, and black pepper, stirring well to incorporate the spices into the wheat.
Simmering the Dish
Bring the mixture to a boil, then reduce the heat to low and cover the pan with a lid. Allow the freek to simmer for about 45 minutes, stirring gently at the 35-minute mark. Tip: If the wheat appears dry, add a little water; if it is still moist, leave the lid off to allow excess steam to escape.
Garnishing and Serving
Once the freek is cooked to a tender texture, garnish with toasted almond slices and fresh cilantro for a delightful crunch and fresh flavor. Serve and enjoy this aromatic and comforting Egyptian dish!
