Egyptian Fish's Rice | Roz el Samak

Egyptian fish’s rice, known for its deep, rich flavor, is a staple seafood dish in Egyptian cuisine. The rice is infused with golden-browned onions, tomato paste, and warm spices like cumin and coriander, giving it a distinct color and aromatic taste. It is traditionally paired with any perfectly seasoned fish, creating a balanced and satisfying meal. A final touch of fresh lemon juice and parsley enhances the flavors, making this dish both refreshing and hearty. Enjoyed by seafood lovers across Egypt, this dish is a comforting and flavorful way to savor the taste of the sea.


Ingredients

(Seasonings should be added to taste.)


For the Fish's Rice:

  • olive oil

  • 1 yellow onion, diced

  • 1 tablespoon tomato paste

  • 1 ½ cups long grain rice, washed

  • approximately 2 cups water

  • ground coriander

  • ground cumin

  • sea salt

  • black pepper


For the Salmon:

  • 1 pound Atlantic salmon fillet

  • pink Himalayan salt

  • black pepper

  • white pepper

  • 4-6 garlic cloves, minced

  • yellow mustard


For Garnish:

  • juice of one lemon

  • fresh parsley, chopped


Instructions


Prepare the Fish's Rice

Begin by frying diced yellow onions in olive oil until they are golden brown and fragrant. Once the onions are cooked, add tomato paste and washed long grain rice. Mix it well and let it rest for about 30 seconds. After the rice has rested, add water to the pot, then season with ground coriander, ground cumin, sea salt, and black pepper. Gently mix everything together. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer on low for 45 minutes, ensuring the rice is fully cooked and tender.


Prepare the Salmon

Note: The rice recipe is traditionally Egyptian, while the salmon preparation is not an Egyptian recipe. It is simply a flavorful pairing option.


While the rice is cooking, slice the salmon into fillets and pat them dry with a paper towel. Season the fillets with pink Himalayan salt, black pepper, white pepper, minced garlic, and yellow mustard. Massage the seasonings and mustard into the salmon fillets to ensure they are evenly coated. Once seasoned, air fry the fillets at 400°F for 15 minutes until they are cooked through and slightly crispy on the outside.
