Egyptian Kibda | Beef Liver

Egyptian beef liver, also known as kibda, is a popular and flavorful dish in Egyptian cuisine, known for its tender texture and rich taste. The liver is marinated in a tangy blend of lemon, lime, and spices like paprika and cumin, then sautéed with onions and bell peppers. The result is a savory dish that pairs perfectly with warm pita bread, offering a satisfying combination of flavors. Kibda is often enjoyed as a quick and delicious meal, cherished for both its simplicity and depth of taste.


Ingredients

(Seasonings should be added to taste.)


For the Marinade:

  • 2 ¾ pounds beef liver

  • juice of 1 lemon

  • juice of 1 lime

  • white vinegar

  • 6-9 garlic cloves, minced

  • paprika

  • ground cumin

  • sea salt

  • black pepper


For Sautéing:

  • 2 tablespoons unsalted butter

  • olive oil

  • 1 yellow onion

  • 1 green bell pepper

  • 1 red bell pepper


Instructions


Preparing the Beef Liver

Start by slicing the beef liver into thin pieces; the thinner, the better, as this will help it cook more evenly. Marinate the beef liver with lemon juice, lime juice, a splash of white vinegar, minced garlic, paprika, ground cumin, sea salt, and black pepper. Mix everything well to ensure the liver is fully coated with the marinade. Let it marinate for a few hours to allow the flavors to soak in.


Cooking the Beef Liver

In a skillet, sauté the sliced onions in a combination of butter and olive oil. Cook until the onions are translucent, which will enhance their sweetness and flavor. Once the onions are ready, add the marinated beef liver to the pan. Stir to combine, then immediately add the sliced green and red bell peppers. Mix everything together and let it simmer for about 10 minutes, allowing the liver to cook through while soaking up the flavors from the peppers and onions.
