Tips for Extra Creamy Hummus:

For a lighter and fluffier hummus, you can blend in a few ice cubes instead of using the reserved chickpea cooking liquid. The cold temperature helps create a smoother texture while keeping the hummus light and airy.


If you're aiming for the ultra-silky texture often found in restaurants, you can remove the skins from the cooked chickpeas before blending. After cooking, place the chickpeas in a bowl of cold water and gently rub them between your hands. The skins will loosen and float to the surface, making them easy to skim away. While this technique produces an exceptionally smooth hummus, it does require discarding the skins. The Egyptian Cook prefers to keep the skins and avoid wasting any part of the chickpea, but the choice is yours depending on the texture you prefer.
