Ingredients

• 12 ounces carob pods
• 16 cups water (for rinsing, boiling, and blending)
• 2 cups sugar
• ice

Instructions

Rinse & Prepare the Carob:

1. Rinse 12 ounces of carob pods to remove any zibala.
2. Break the carob pods into small pieces and set them aside.

Make the Caramel:

1. Add 2 cups of sugar to a large pot over medium-high heat.
2. Heat the sugar until it begins to melt and form a bubbling, amber liquid.
3. Continue cooking and mixing the caramel until it has fully liquefied.
4. Mix in the broken carob pods and coat them evenly.

Simmer the Carob:

1. Add 10 cups of boiling water to the pot.
2. Mix everything thoroughly.
3. Simmer the carob for 1 hour over medium heat.

Blend & Strain the Carob:

1. Transfer the carob pods to a blender, saving the caramel liquid to the side allowing it to completely cool down.
2. Add 3 cups of water to the blender.
3. Blend the carob until it becomes nice and smooth like you.
4. Strain the caramel liquid through a cheesecloth into a large pitcher.
5. Strain the blended carob through the same cheesecloth.
6. Squeeze the cheesecloth to extract every last drop.

Serve:

1. Add a generous amount of ice.
2. Serve chilled.
